Our lemon thyme gin toddy pairs well with seafood, spicy Asian dishes, and any savory appetizer complementing the herbal and lemon notes.

Crafting this cocktail involves a two-step process. First, the SOUP cycle on the Wolf Gourmet blender turns fresh sprigs of thyme, sugar and water into a sweet, herbaceous syrup, adding a fresh, grassy note pairing wonderfully with gin.

The next step blends the gin, fresh-squeezed lemon juice, and ice with the syrup to make frozen toddies. Your guests may ask for another round. The recipe makes enough syrup for multiple batches of cocktails.

Ingredients
Thyme Simple Syrup
  • 1 cup water
  • 1 cup sugar
  • 6 - 7 sprigs fresh thyme
Gin Toddy
  • 1/2 cup gin
  • 1/4 cup fresh lemon juice
  • 1/3 cup thyme simple syrup
  • ice
  • thyme sprigs for serving
  • lemon peel for serving
Instructions
  • Make thyme simple syrup: Place the water in the blender, followed by the sugar and thyme sprigs. Select the SOUP setting and press start. When cycle is complete, pour syrup into a separate container. Syrup will keep for up to one month in the refrigerator.
  • Make gin toddy: Place gin in the blender, followed by the lemon juice, 1/3 cup thyme simple syrup and 1 cup ice to blender jar. Select MANUAL/LO and blend, gradually increasing the speed to SPEED 8 until ice is fully dissolved, about 15 seconds. When cycle is complete, pour toddy into 4 glasses filled with ice. Serve with thyme sprig and lemon peel, if desired.
