I can never get over how pretty it is, and therefore it has made many appearances on my dinner party tables, and makes an absolutely perfect starter for Christmas or New Years dinner.

The best part (besides its good looks) is how light it is. I sip the hot soup directly from the bowl, and have been known to finish a whole batch myself over a day or two- eek! I love a drizzle of truffle oil on the top, but have garnished with everything from fresh herbs and edible flowers to a single sterile bird feather on the top of each bowl (now that’s a fancy presentation).

When having a cocktail party, this is lovely served in shot glasses or espresso cups as a hot appetizer. However, this soup is delicious enough to pass the test with my children and I will often send a thermos of this hot soup in their lunch boxes- very versatile!

Ingredients
  • 1/4 cup olive oil
  • 1 yellow onion roughly chopped
  • 1/3 cup dry white wine
  • 1 head cauliflower (7-8 cups), roughly chopped
  • 4 cups water
  • kosher salt
  • truffle oil or extra virgin olive oil (optional) for drizzling
Instructions
  • In a Wolf Gourmet Dutch oven over medium heat, add the olive oil and the onion. Sprinkle the onions with kosher salt and cook for 5 to 7 minutes until the onions are soft and translucent. You do not want any color at all on those onions, so be sure to keep a close eye on them, reducing heat if necessary.
  • Add the white wine and let the onions and wine cook 2 to 3 minutes longer. Add the chopped cauliflower and the water to the pot.
  • Add a lid to the pot and reduce the heat to low. Let the soup simmer over low heat for 30 minutes.
  • Transfer the soup to the jar of your Wolf Gourmet blender and puree on MANUAL/HI until you have a very smooth and velvety soup.
  • Meanwhile, rinse out the pot and then add the pureed soup back to that pot. Season well with kosher salt. Bring to a simmer over low heat and then serve hot.
  • Drizzle with a small amount of truffle oil or olive oil, if desired.

    Yum! I can’t wait to try this. I’m also using coconut milk as a sustbitute for heavy cream in our pumpkin pie this year. Hopefully it will turn out well.
