peanut butter
Peanut butter spread on a piece of toast is a satisfying breakfast or a protein packed post-workout snack. You can make healthy nut butters in just a few minutes with the Wolf Gourmet blender. Making homemade nut butter allows you to customize the ingredients based on your taste, and avoid added stabilizers or preservatives. The variations are endless. We have a few suggestions below, but feel free to experiment with your own ideas.

Just starting out? Try peanut butter. You can make it as smooth or crunchy as you like. We like using honey-roasted nuts for a bit of added sweetness. As you begin to grind the dry nuts, a vortex will form in the center of the jar. This is the time to add additional ingredients to your nut butter. Remove the cap and add in the additional ingredients (like peanut oil, cocoa powder or even cashews for a more distint flavor). Once your peanut butter reaches your ideal consistency, transfer to a dry jar. Nut butters without stabilizers naturally separate. To reincorporate the oil into the nut butter, let the jar stand on its side for a few minutes. The oil will settle on the side, making it easier to insert a knife and stir.

Ingredients
  • 1 pound peanuts preferably honey-roasted
Instructions
  • Place the peanuts in the blender, select MANUAL/LO, and blend. As the peanuts become finer in texture, gradually increase the speed to SPEED 8. Use the tamper as needed to stir the peanut mixture and push it down (the peanuts will move up the sides of the blender as they are processed.
  • Once the peanut butter is visibly smooth along the sides of the jar and there is a mass of chopped nuts rotating around on the blades, gradually reduce the speed to SPEED 4. Once a vortex forms in the center of the peanut butter, add your mix-ins (if using, see the variations that follow). Once the peanut butter reaches your desired smoothness, stop the blender.

For the variations below, add ingredients once a vortex forms in the center of the peanut butter.

Chocolate
Stir together ½ cup unsweetened cocoa powder and ½ cup turbinado sugar in a small bowl. Add 3 tablespoons peanut oil and the cocoa mixture, ¼ cup at a time.

Cinnamon
Add 2 tablespoons of ground cinnamon.

Peanut-Cashew
Add 2 tablespoons peanut oil and 8 ounces roasted cashews. Blend until desired smoothness is reached.
