During the holiday season, cookie baking is at its prime.  I love whipping up several batches of cookie dough so I can bake dozens of cookies for family and friends.  The classics like gingerbread and sugar cookies can always be counted on to be holiday favorites. Sometimes, however, I like to mix it up and change the texture and end result altogether.

That’s where these Sugar Cookie Bars come in.  They are the perfect cross between a sugar cookie and a dessert bar. They taste just like sugar cookies but are thicker and pack in more flavor.

I love using my Wolf Gourmet countertop oven for just about anything, especially for these cookie bars. The oven bakes evenly and perfectly due to its precise temperature control. I can bake my entire holiday meal with it, including: appetizers, main course meats and dessert.

I used the BAKE mode to make these cookie bars. They came out just like I love them, with a crunchy exterior of a true sugar cookie with a chewy interior of a brownie.

They start with butter and a bit of cream cheese which adds a little more flavor.  The rest of the ingredients are the typical ones found in a sugar cookie however I added in a healthy amount of vanilla and a spicy twist of cinnamon.  I really think it brought out the flavor even more.

Once the cookie bars were done baking, I wanted to give them a fun holiday twist so I used my Christmas tree cookie cutters. To make these cookie bars even more festive, I piped them in fun tree colors and added a few sprinkles.  You can totally have fun with this process. In the end, you will have glorious sugar cookie bars everyone will adore this holiday season, including Santa.

Ingredients
For the Bars
  • 3/4 cup unsalted butter room temperature
  • 4 oz cream cheese room temperature
  • 1 1/3 cup granulated sugar
  • 1 large egg
  • 2 1/2 cups all-purpose flour sifted
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 tbsp pure vanilla extract
For the Buttercream
  • 1/2 cup unsalted butter room temperature
  • pinch of salt
  • 1 1/2 cups confectioners' sugar
  • 1 tbsp heavy cream
  • 1 tsp vanilla extract
Instructions
For the Bars
  • Preheat Wolf Gourmet Countertop Oven to 350 degrees on bake setting.
  • Add butter, cream cheese and sugar to bowl of stand mixer or medium sized bowl with hand mixer and mix on high speed for 3-4 minutes until light and fluffy.
  • Slow down mixer to medium speed and add in egg.
  • Finally, slow down mixer to lowest speed and add in flour, baking powder, salt, and cinnamon then vanilla and mix until dough comes together. Scrape bowl as needed. The dough should be thick.
  • Evenly spread cookie bar dough in a parchment lined or baking sprayed/greased 9x13 baking sheet and bake for 20-25 minutes. Remove from oven and allow to cool to room temperature. Cut cookie bars using holiday cookie cutters if desired.
For the Buttercream
  • In your mixer, add butter and salt at medium low speed.
  • Next, turn the mixer down to low and slowly add powdered sugar in small portions until all is added then turn the speed to medium high to combine.
  • Add heavy cream and vanilla and mix until nice and fluffy. Lastly, add in food colorings of your choice, if desired.
  • Pipe buttercream on room temperature cookie bars and serve.
